Vegetarian Summer 2024



A couple years ago Jennie described to Todd my normal vegetarian fare as "slop."  At that time I was making mostly quinoa-based salads... all kind of the same thing.  Since then I've tried to expand my repertoire.  This is what I have now:

[PVC= High Protein Vegetarian; WV= Weeknight Vegetarian]

M-Buddha Bowls (5); Tu-Tacos (3); W -  Other salad (6); Th- Pasta or Curry (3) ; F-side salad (to go with weekly pizza) (5); Sat- sandwich/wrap (3); Sun- Green Salad

Buddha Bowls

  1. Buddha Bowl #1 - Healthy Vegan Buddha Bowl with Peanut Sauce  Chickpeas, soy sauce and peanut butter
  2. Best Buddha Bowl (#2) (love and lemons)  Sauerkraut, Chickpeas, cabbage, brown rice, tahini sauce
  3. Tofu and broccoli and quiona Buddha Bowl #3 - chickpea, quionoa, tofu, cabbage, zucchini

Quinoa-based salads ("Slop")

  1. Asian Peanut broccoli (tofu) quinoa (PVC 57). This is yummy.  Soy Sauce - peanut butter.  You should use more broccoli than it asks for.
  2. Crunchy Thai peanut & quinoa salad (CB)
  3. Thai quinoa salad (lime and soy, no peanuts) (CB)
  4. Quinoa Black Bean Salad (CB)

Tacos

  1. Chili-roasted sweet potato and black bean tacos with cilantro lime cream (PVC 106)   (the cilantro lime cream is excellent) (the spice mixture on the sweet potatoes is excellent) I air fry the potatoes.

  3. Air Fryer Cauliflower Tacos - Delish - link (these feel like fish tacos; excellent with corn tortillas; the highlight is the quick pickled cabbage slaw that goes on top; I added a bit of mayo -- yum!)

Sandwiches and Wraps

  1. Buffalo Chickpea salad sandwich (PVC 111)
  2. Fresh veggie and quinoa wrap with sun-dried tomatoes (PVC 114)
  3. Baked Quinoa Falafel Pita with Tzatziki (PVC 108)

Pasta

  1. Crisp Gnocci with Brussels sprouts and brown butter
